Broccoli and carrot stir fry is great way to add life to a simple meal. This combo is packed with the most nutritional punch of any vegetable. Apart from being nutritious, it is also easy to make. What i really love about this meal is the way the flavors from the carrot and other veggies masks perfectly the slightly bitter taste from the broccoli.
Broccoli is rich in vitamin C and vitamin K with considerable amounts of B vitamins and manganese whereas carrot which is well known for its rich source of beta-carotene and fiber is also rich in vitamin A, Vitamin C, Vitamin K, vitamin B8, folate, potassium, copper, and manganese, pantothenic acid and iron. For this recipe, i steamed the broccoli a little to help the seasoning penetrate better but if you want to keep the crunch, skip the boiling part and just move to stir frying for a quick side dish.
How to make Broccoli & Carrot Stir Fry
• Prep time: 15 minutes
• Cook time: 5 minutes
• Total time: 20 minutes
• Meal type: Side dish
• Dietary: Vegetarian
Ingredients:::
• 2 tbsp. Vegetable oil
• 1 small red onion, chopped
• 120g broccoli (cut into florets)
• 2 medium sized carrots, chopped
• 2 cloves garlic , minced
• 2 green chilli, chopped
• ½ tsp freshly ground black pepper
• Salt to taste
Preparation:::
Step 1: Heat up 2 cups of water till it starts to boil. Once it boils, add the broccoli florets and salt to taste, then leave to steam for 2 minutes on low heat. Turn off burner, drain off the water and set the steamed broccoli aside.
Step 2: Heat up the oil in a frying pan, add the red onion, and green chilli. Stir fry for 1 minute. Add the minced garlic, steamed broccoli, carrots, pepper and salt to taste. Stir fry for 1 minute also.
Step 3: Serve as a side dish to any meal of you choice.
